Serious cooks demand Carbon steel for serious sharpness. Much harder and tougher than stainless alloys, Carbon steel holds an edge longer and can be easily restored. We have refined the surface of our Carbon blades with a ceramic stonewash finish to improve stain resistance and a smoother cutting experience. Each blade shape is precision ground with unique geometry to enhance its intended use.
Messermeister has created a radical new performance-driven design to optimize the extreme cutting ability of our Carbon steel blades. Our high handle position maximizes comfort with a ramped bolster and integrated control surfaces that guide the users hand to the perfect mounting position. The beautiful handle material is made from ultra-tough Spanish hardwood shavings stabilized with non-phenolic, natural resins.

This knife is unreal, just curious if you can use a standard steel rod for honing the edge, or if something else is recommended? Also what is recommended for sharpening?
Unbelievable knife! I was a little apprehensive about giving this one a shot, even through I had seen rave reviews. I was completely blown away with it right out of the box. Impeccable weight and balance, and the carbon steel holds an edge sharp enough to shave the hair off my forearm. I know that this piece will take a little more love and care than a stainless blade, but it's definitely worth it ion my opinion.
Solid construction and stain resistance is better than I thought it would be, but for me the knife is just too thick and didn't come out of the box sharp enough to cut a tomato. I want to like it, but it doesn't outperform my culinary school issue knife and for the price it should.
Love this knife so much I ordered two more from the same line. Probably not the best for a novice, carbon blades take a little extra care. Definitely love it
Absolutely love this knife, I added it to Oliva collection. It is razor sharp and the ergonomics are outstanding with a subtley curved blade making chopping and slicing motions equally smooth and efficient. Highly recommend this knife.
